Fried Rice with Coconut Milk

This recipe is from my aunt Lily and it goes really well with chicken or prawn curry!

Ingredients:
- Basmati Rice 1 cup
- Coconut Milk 1 cup
- Cloves 2
- Cinnamon 1 inch
- Cardamom 2
- Star anise 1 
- Bay leaf 1
- Onion 1 medium thinly slices
- Green Chillies 2
- Turmeric Powder a pinch
- Chilli powder 1/2 tsp
- Oil/ghee and Salt to taste

Method:
- Soak rice in some water for 30 minutes
- In a pan, heat oil/ghee/butter (it tastes best with ghee)
- Add cloves, cinnamon, bay leaf, star anise and cardamom and saute for a couple of mins till fragrant
- Add sliced onions and green chillies and saute till onions are brown
- Add salt and chilli powder
- Drain the rice and add it to the pan, fry for some time until the rice catches on all the spices
- Add coconut milk
- Cover and cook till done
