I tried this recipe today and both A and I liked it a lot..
Ingredients:
- 1 Sweet potato, medium sized
- 2 tbsp Grated coconut
- 2 tsp oil
- 1/2 tsp Mustard seeds
- 1 tsp Chana - Urad dal mixture
- Red chilli powder
- Salt
- Coriander leaves for garnishing
Method:
- Wash, peel and chop sweet potato into small cubes. Cook then in a microwave with some water for about 10 mins or until they are cooked. Remove excess water and keep aside.
- Heat oil in a kadai. Add seasoning. Add cooked sweet potato. Saute well.
- Add salt and red chilli powder and mix well. Fry well for a few minutes.
- Add grated coconut and cook for another 2 minutes
- Garnish with coriander leaves. Serve hot with rice.
