Thai Stir Fry Chicken

Ingredients:
1 chicken breast, sliced into thin strips (so that they cook easily)
5 to 6 garlic cloves minced
1/4 onion chopped (or 3 small onions)
1/4 cup white wine
1 tsp paprika or chilli powder 
1/4 red pepper, sliced 
oil about 1 tbsp 
For the sauce:
3/4 teaspoon palm sugar (or white sugar) 
3 tablespoons fish sauce
1 tbsp soya sauce 
1 tbsp oyster sauce 

Method
- Prepare the sauce
- Heat oil in a pan until very hot. Add the garlic and onions and keep stirring for 2 minutes so it doesn’t burn.
- When lightly browned, add the chicken. Cook for a few minutes and then add the wine
- Cook for around 10 minutes until the chicken is almost done and all the wine has soaked in 
- Add the red pepper, chilli powder and the sauce
- Cook on medium heat till the chicken is done. If it gets too dry, you can add a bit of water
- To a taste test and add any of the sauce ingredients as needed. 
- Mix well and serve on rice (for a one-dish meal), or in a plate (to share with friends). Garnish with cilantro.
