Baked Chicken Wings Thai Style

A and I came back home from work today ravenously hungry. There were some leftover chicken wings in the freezer and I put together this one inspired partly by a food show that was coming on at that time and partly by all the Thai ingredients sitting in my shelf. It turned out every bit yummy as I hoped it would! Here is the recipe...

Ingredients: (I dont have exact measurements as I just threw them in together)
  • Chicken wings - 6
  • Honey - 2 tablespoons
  • 1 Tbsp. dark soy sauce
  • 3 Tbsp. fish sauce
  • juice of 1 lime
  • 1 Tbsp. chili powder
  • 1/2 Tbsp. ground coriander
  • 1 tbsp ginger garlic paste
  • 1 tsp red chilli flakes

Preparation:

  1. Combine all the ingredients together into a marinade. Mix the wings in with the marinade, stirring well to coat the meat.
  2. Allow wings to marinate while you warm up the oven (the longer you marinate the better it tastes)
  3.  Turn oven to the grill setting and place wings on a grill with a pan underneath to catch drippings. Watch the wings carefully as they cook, turning every 5 minutes or so to make sure they don't burn. You can keep basting the wings with leftover marinade.
  4. Cook until well done (15 to 30 minutes). Serve hot with some peanut sauce. Enjoy!
