A and I came back home from work today ravenously hungry. There were some leftover chicken wings in the freezer and I put together this one inspired partly by a food show that was coming on at that time and partly by all the Thai ingredients sitting in my shelf. It turned out every bit yummy as I hoped it would! Here is the recipe...
Ingredients: (I dont have exact measurements as I just threw them in together)
- Chicken wings - 6
- Honey - 2 tablespoons
- 1 Tbsp. dark soy sauce
- 3 Tbsp. fish sauce
- juice of 1 lime
- 1 Tbsp. chili powder
- 1/2 Tbsp. ground coriander
- 1 tbsp ginger garlic paste
- 1 tsp red chilli flakes
Preparation:
- Combine all the ingredients together into a marinade. Mix the wings in with the marinade, stirring well to coat the meat.
- Allow wings to marinate while you warm up the oven (the longer you marinate the better it tastes)
- Turn oven to the grill setting and place wings on a grill with a pan underneath to catch drippings. Watch the wings carefully as they cook, turning every 5 minutes or so to make sure they don't burn.You can keep basting the wings with leftover marinade.
- Cook until well done (15 to 30 minutes). Serve hot with some peanut sauce. Enjoy!
