My first recipe with a photograph. I decided that if I was serious enough about cooking food that tastes good then I should go that extra mile to make sure it looks good too! So here its, our Sunday night comfort food... a delicious pea soup from Jamie Oliver.
Ingredients:
- Frozen peas 250 gm
- Potato 1 large peeled and grated
- Onion 1 small chopped
- Vegetable stock 2 cups
- Mint leaves 1 sprig
- Celery 1 stalk chopped
- Butter 1 knob
- Cream 50 ml
- Feta cheese 30g
- Croutons a handful
- Salt and pepper to taste
- Olive oil
Method:
- In a large deep pan on low heat, add a tbsp of olive oil and a knob of butter. When it melts, add chopped onions and celery, add a splash of water, cover and cook till soft (about ten minutes)
- Meanwhile, in a smaller pan add the vegetable stock and when it simmers add the grated potatoes and half a sprig of mint leaves. Let it cook about ten minutes
- When the vegetables are soft, add frozen green peas and cook for a minute. Then mix in the stock and bring to a boil
- Stir in the cream and cook for five minutes. Turn off the heat and when it cools a little, blend the soup in a blender
- Season with salt and pepper
- Transfer the soup into bowls, sprinkle feta cheese, mint leaves, croutons and drizzle over some olive oil. Serve warm.
