To make the mint chutney, grind together -
1 bunch fresh mint leaves, 1/2 a bunch of coriander leaves, 2 cloves of garlic, 1/2 inch piece of ginger, 1 green chilli, salt, sugar and 2 tsps of lime juice
For the sandwich,
Butter slices of bread lightly. Spread the mint chutney on each slice. Grate some cheese on top. Cut off the edges and serve chilled.
