Ma's delicious pooris

This is my Mom's famous recipe for making great tasting crispy pooris that taste like heaven. The best part is that they absorb very little oil while frying! Try them.

Ingredients:
Maida - 2 cups
Rava - 1 table spoon
Sugar - 1 tbsp
Salt to taste
Rice flour - 2 tbsps
Oil for deep frying

Method:
  • Add maida, rava, salt and sugar. Knead the mixture with water (adding little by little) until you get a thick dough. The most important thing is to ensure that the dough is not soft and elastic like you make for rotis. So use little water while kneading.
  • Make lemon sized balls of the dough. Spread the dough, apply a little rice flour on both sides. Make small sized pooris. The pooris should not be too thin.
  • Deep fry pooris in hots oil for a minute turning over both sides until they are golden brown.
  • Serve hot with any curry of your choice.
