Ma's Special Chicken with Fried Onions

This is an unbelievably simple but extremely delicious chicken recipe that everyone will love. Ma makes this all the time at home and it tastes great with both rice and rotis. We also use the left overs the next day as a sandwich filling.


Ingredients:
Chicken boneless - 1/2 kg, cut into 1 inch sized pieces
Onions - medium 4
Curry leaves - 1/4 cup
Coriander leaves for seasoning

For marinade:
Red chilli powder - 1 tbsp
Coriander powder - 2 tbsp
Turmeric powder - 1 tsp
Garam Masala - 1 tsp
Pepper powder - 1 tsp
Ginger Garlic paste - 2 tbsp
Curd - 2 to 3 tbsp
Salt to taste

Method:
Marinate the chicken in the above mixture for an hour.
Place the marinated chicken in a non stick pan and cook on medium heat and keep stirring till the chicken is fully cooked. This may take around 15 to 20 minutes. Sprinkle a little water in between if needed to ensure that the chicken does not dry up.
Once the chicken is cooked take it off the pan.
Cut onions into thin long slices.
Heat oil for deep frying in another pan.
Fry the sliced onions in oil on medium heat until they are golden brown. You will need to fry the onions in small batches.
Fry the curry leaves in oil.
Add the fried onions and curry leaves to the chicken and mix well.
Garnish with coriander leaves and serve hot with rice.
