Mushroom Ragout on Garlic Toast

Ingredients:
  • Fresh mushrooms sliced, 1 packet
  • 2 cloves minced garlic
  • 1 tablespoon fresh thyme (use dried thyme alternatively)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup red wine or sherry
  • 1/4 cup chicken stock or vegetable stock
  • 1/4 cup heavy cream
  • 1 tablespoon butter

Method:

  • Add the butter to a large pan on high heat. When it foams, add all the mushrooms.
  • Add the salt and pepper. Wait until the water comes out and then saute mushrooms till brown 
  • Throw in the garlic and saute that for a minute
  • Add the wine, cook on high heat till the alcohol evaporates (about a minute)
  • Add the chicken stock and the cream
  • Cook for around 3 to 5 minutes until it starts to thicken
  • Finish off with a dash of chopped thyme
  • Now toast bread in a toaster or pan, rub some raw garlic over it 
  • Spoon over the freshly made mushroom over the toast, drizzle any extra sauce over it 
  • Serve immediately

I made this for dinner along with a watermelon and cheese salad (see my other post). It turned out to be a light, refreshing and delicious dinner for two.
