- Fresh mushrooms sliced, 1 packet
- 2 cloves minced garlic
- 1 tablespoon fresh thyme (use dried thyme alternatively)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/3 cup red wine or sherry
- 1/4 cup chicken stock or vegetable stock
- 1/4 cup heavy cream
- 1 tablespoon butter
Method:
- Add the butter to a large pan on high heat. When it foams, add all the mushrooms.
- Add the salt and pepper. Wait until the water comes out and then saute mushrooms till brown
- Throw in the garlic and saute that for a minute
- Add the wine, cook on high heat till the alcohol evaporates (about a minute)
- Add the chicken stock and the cream
- Cook for around 3 to 5 minutes until it starts to thicken
- Finish off with a dash of chopped thyme
- Now toast bread in a toaster or pan, rub some raw garlic over it
- Spoon over the freshly made mushroom over the toast, drizzle any extra sauce over it
- Serve immediately
