Chicken with Sweet Potatoes

This recipe came about when I was trying to put together a curry in a hurry with whatever ingredients I had on hand at the moment. It turned out by sheer fluke to be quite tasty. We ate it with bread and it was comfort food on a rainy afternoon.

Ingredients:
  1. Chicken - 1/2 kg, cut into small pieces
  2. Onion - 1 small sized, chopped roughly
  3. Tomato - 1/2, chopped roughly
  4. Sweet potatoes - cut into small pieces, about 1 cup
  5. Ginger, garlic paste - 1 tbsp
  6. Chilli powder - 1 tsp
  7. Coriander powder - 3 tsp
  8. Turmeric pd - 1/2 tsp
  9. Pepper pd - 1 tsp
  10. Salt, to taste
  11. Curry leaves, a handful
  12. Coconut milk - 1/4 cup (I used readymade coconut milk powder dissolved in 1/2 cup water)
  13. Coriander leaves, for garnish
Method:
- Add ingredients 1 to 9 in a pressure cooker and cook for 1 whistle
- When it cools, add salt, curry leaves and coconut milk and cook on low heat for about 10 minutes. Add a little water if needed
- When chicken is cooked, garnish with coriander leaves and serve. Thats it!
