Chicken Stir Fry with Coconut Pieces

This is a truly delicious recipe that I found and customized from http://malluspice.blogspot.com/search/label/Chicken. A must try if you like spicy, south indian chicken.

Ingredients:
- Chicken - 500 gms cut into small pieces (its important that the pieces are small)
- Small onions / Indian shallots - chopped finely, about half a cup
- Regular red onion - 1 chopped fine
- Tomato - 1, chopped fine
- Coconut - cut into small pieces about 1/4 cup (dried coconut tastes better)
- Ginger and garlic paste - 2 tbsp
- Green chilly paste - 1 tsp
- Red chilli powder - 2 tsp (less if you like it not so spicy)
- Pepper powder - 1 tsp
- Coriander powder - 2 tsp
- Garam masala pd - 1 tsp
- Curry Leaves, a small handful
- Coriander leaves, chopped for garnish
- For marinade, 1/2 tsp turmeric powder 1/2 tsp chilli powder
- Salt and oil as needed


Method:
- Wash and drain the chicken. Marinate it with turmeric and chilli powders and set aside for an hour
- Heat oil in a pan and fry the shallots until golden brown
- Remove the shallots from the oil and drain onto paper towels
- Now add the red onion to the same oil and fry well on medium heat
- When fried, add ginger garlic and green chilli paste and fry for another minute
- Add the chicken, tomatoes, coconut pieces and all the spices
- Stir fry on high heat for 3 minutes until chicken is well coated in the masala
- Lower the heat, cover and cook for just ten minutes
- Now open the lid and add salt and continue to cook for another few minutes
- Add the fried shallots and curry leaves, turn on the heat to high and keep stirring the chicken on high heat for about ten minutes (do not add any water)
- Check to see if the chicken is cooked
- Garnish with chopped coriander leaves and serve.
