My little invention! A little high on calories but delightful breakfast or dinner recipe :)
What you need:
For the crepe:
- 1 cup all purpose flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 2 tbsp melted butter
- 1/4 tsp salt
- pepper to taste
For the filling:
- Ham 100 gms chopped
- White onion - 1 small chopped
- 3 pearls of garlic chopped
- 1 tbsp olive oil
- 2 tbsp cheddar cheese grated
To make the crepes:
In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.Heat a lightly oiled large sized frying pan over medium high heat. Pour about 1/4 cup of batter into the pan and swirl the pan around in a circular motion so that the crepe thins out evenly. Cook for about 2 minutes on each side until light brown. Make all the crepes and keep them aside.

To make the filling:
Heat olive oil in a pan and add chopped garlic, fry for a minute and add the chopped white onion. Fry for another minute and add the chopped ham. Check seasoning and fry for a few minutes. Take it off the heat.
Now to serve:
Warm the crepe a little bit. Spread the white sauce on half of the crepe, top with the ham mixture and sprinkle some grated cheese on top. Close the crepe and serve hot. Yum!
