I finally made these chicken fajitas today after going through a Mexican food craving for weeks now. It was quite close to the real thing actually, a wholesome week night meal and something that I'll definitely make again.
Ingredients: (serves 2)
For the stuffing:
•1 tablespoon vegetable oil
•1 boneless chicken breast, cut in thin strips
•1 medium onion, cut in wedges
•2 cloves garlic
•2 green or red chillies sliced
•1/2 red bell pepper, seeded and cut in strips
•1/2 green bell pepper, seeded and cut in strips
•1/2 zucchini, trimmed, cut in strips
• Salt and pepper, to season
Serve with:
•4 tortillas, warmed (I used store bought ones)
•guacamole (recipe below)
•You can also add sour cream, spanish rice and refried beans for a complete package but I didnt have these on hand, so skipped them
Method:
- Heat the oil in a heavy pan; cook the chicken strips over high heat, stirring constantly, for 5 minutes, or until cooked. Drain and serve.
- Add the onion, green chillies and garlic to the oil in the pan and sauté over high heat for 2 minutes. Add the bell peppers and zucchini; cook over high heat for 4 minutes, or until the vegetables have begun to have a blackened look around the edges.
- Return the chicken to the pan and heat until sizzling hot.
- Serve right away, with warm tortillas, sour cream and guacamole.
Recipe for making fresh guacamole:
Ingredients
1 ripe avocado
1/2 red onion, minced
1 tablespoon coriander leaves
a pinch of cumin
a pinch of cayenne or red pepper
1 tablespoon lemon juice
1 tomato chopped
salt, to taste
Method
Scoop out avacado from the peel, put in a mixing bowl. Using a fork, roughly mash the avocado. Add the chopped onion, coriander, lemon, salt and pepper and mash some more. Add chopped tomatoes when ready to serve.
