Calamari / Squid Fry

Ingredients 
  • 1/2 kg fresh squid
  • 1 cup flour
  • 1 tsp salt
  • 1 tsp. dried oregano
  • 1 tsp. paprika
  • 1/2 tsp. black pepper
  • vegetable oil for frying
  • 1 egg (beaten)
Directions
  1. Clean the calamari/squid (cut off heads, slice lengthwise, and remove all the stuff inside. peal off purplish skin, and should be left with off-white, flat pieces. Rinse well)
  2. Slice calamari pieces into lengthwise strips 
  3. Mix flour, salt, oregano, paprika, pepper in a bowl
  4. Put all the calamari strips into the egg, then drop into flour mix making sure each piece is well coated with flour
  5. Drop into hot oil, and let fry until light to golden brown (3 to 4 mins only, dont overcook)
  6. Let strain, salt to tase, and serve with Chilli or Thai sauce.
  7. Enjoy! This makes a great starter for a Saturday evening at home (For the sauce, I mixed some chilli sauce and tomato sauce)
